Classic Grilled Cheese & Tomato Soup

A grilled cheese sandwich is one of the few things I know how to make, but I suppose everyone does. I make a plain, non-gourmet version that take minutes to prep and cook. Not only is it super easy and quick to make, it's tasty, hot food on the table. I just love a good, old-fashioned soup and sandwich combo.

I get creamy tomato soup from the deli at Whole Foods, then finish it with chives and truffle oil.

I use sliced French bread, mild cheddar, and sottocerene with truffles. Throw butter in the pan and cook for 3 minutes on each side, until the cheese is melted and the bread is crunchy and golden.
